He has changed his last name a lot within the books.
First Wayland, then Morgenstern, then Herondale, and last Clary Fray tells him that you get a name from someone who loves you and that he is a Lightwood.

Biography

Early life Edit
Jace's Mother Celine Herondale was pregnant in her eigth month when her husband Stephen Herondale died. She killed herself by cutting her wrists and bled to death. Valentine Morgenstern had given her a mixture of Angel blood and wouldn't let his experiment be wasted, so he cut the baby out of Celines dead body and raised it.
Valentine raised Jace to be a fighter, but he found that the Angel blood had made him soft so he planned his own "death" and made it look like he was dead. He had always told Jace that his name was Jonathan Chistopher Wayland, so when Valentine died, the Lightwood adopted their best friends son.
Valentine had alway called him Jonathan, but when he moved to the Lightwoods, Maryse started calling him Jace and he liked it.

When Clary first sees him she thinks of him as a lion. With the golden hair and the golden eyes.
